The weather is getting warmer and if you are looking for an easy yet fulfilling way to pack some protein, veggies, and whole grains into your day; this “Super Bowl” is the way to go! It’s so easy to change up the ingredients as you see fit to whatever veggies or protein source that you prefer. Below I have listed my favorite way to quickly and easily put together a healthy and delicious power food combo to feed your body, mind, and soul.
Serves 2
Here is what you will need:
1 cup cooked Organic Quinoa (I prefer red but you can use any one you choose)
1/4 cup chopped mint for garnish
1 Tbsp organic Extra Virgin Olive Oil
2 Tbsp organic Red Wine Vinegar
1/2-1 cup organic Northern White Beans (or whichever bean you choose) Note: I cook these beans by sautéing in olive oil and garlic for about 8 mins before serving.
1/2 cup chopped organic cucumber
1/2 cup chopped organic red bell pepper
1/2 cup halved organic cherry tomatoes
1/4 cup chopped organic red onion
2 Tbsp chopped pitted kalamata olives
1 oz crumbled organic feta
All you have to do is:
Mix Quinoa, mint, red vinegar and olive oil. (Add salt to taste) Divide all ingredients between two bowls and top with each remaining ingredient. Garnish with mint leaves.
Optional: If you would like to whip up a quick homemade dressing to top with, here is what you will need. My choice for a dressing is always a recipe I found on dishingdelish.com. It pairs well with my Greek Salad Bowl.
Dressing: (Store in fridge)
1/2 cup Organic Extra Virgin Olive Oil
1/2 cup Apple Cider Vinegar
1 organic lemon, juice only
1 1/2 tsp dried oregano
1 1/2 tsp dried basil
1 1/2 tsp garlic powder
1 tsp onion powder
1 tsp parsley
1 tsp honey mustard
1 tsp salt
1 tsp pepper
Note: If using fresh herbs, you will need to use about three times the ingredients.
Mix all of the ingredients together; pour into a salad dressing bottle and enjoy!
