Greek Goddess Vegetarian Bowl


The weather is getting warmer and if you are looking for an easy yet fulfilling way to pack some protein, veggies, and whole grains into your day; this “Super Bowl” is the way to go! It’s so easy to change up the ingredients as you see fit to whatever veggies or protein source that you prefer. Below I have listed my favorite way to quickly and easily put together a healthy and delicious power food combo to feed your body, mind, and soul.

Serves 2

Here is what you will need:

  • 1 cup cooked Organic Quinoa (I prefer red but you can use any one you choose)

  • 1/4 cup chopped mint for garnish

  • 1 Tbsp organic Extra Virgin Olive Oil

  • 2 Tbsp organic Red Wine Vinegar

  • 1/2-1 cup organic Northern White Beans (or whichever bean you choose) Note: I cook these beans by sautéing in olive oil and garlic for about 8 mins before serving.

  • 1/2 cup chopped organic cucumber

  • 1/2 cup chopped organic red bell pepper

  • 1/2 cup halved organic cherry tomatoes

  • 1/4 cup chopped organic red onion

  • 2 Tbsp chopped pitted kalamata olives

  • 1 oz crumbled organic feta

All you have to do is:

Mix Quinoa, mint, red vinegar and olive oil. (Add salt to taste) Divide all ingredients between two bowls and top with each remaining ingredient. Garnish with mint leaves.

Optional: If you would like to whip up a quick homemade dressing to top with, here is what you will need. My choice for a dressing is always a recipe I found on dishingdelish.com. It pairs well with my Greek Salad Bowl.

Dressing: (Store in fridge)

  • 1/2 cup Organic Extra Virgin Olive Oil

  • 1/2 cup Apple Cider Vinegar

  • 1 organic lemon, juice only

  • 1 1/2 tsp dried oregano

  • 1 1/2 tsp dried basil

  • 1 1/2 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp parsley

  • 1 tsp honey mustard

  • 1 tsp salt

  • 1 tsp pepper

Note: If using fresh herbs, you will need to use about three times the ingredients.

Mix all of the ingredients together; pour into a salad dressing bottle and enjoy!
